NEW STRATEGIES FOR THE DEVELOPMENT OF INTEGRATED PROCESSES FOR THE GENERATION OF COMPOUNDS WITH FLAVOURING AND/OR OTHER FUNCTIONAL PROPERTIES FROM NATURAL MATERIAL

Objective

The project aims at the comparative investigation of different strategies for the production of high-value fine chemicals. Compounds such as fureanol derivates, maltol, hexenols/als, and fatty acid ester thio derivatives possess high sensory power and further physiological activities and are therefore of interest in food, feed, cosmetic and in pest and insect control. New chemical biocatalytic and microbial production processes for these components will be studied in detail. From a direct comparison of these strategies, the best combination of reaction steps will be found in order to fulfill optimally the demands not only for productivity but also for quality, functional and molecular properties, process integration and reduction of wastes that might cause environmental problems. The combination of chemical biocatalytic and microbial approaches will give us new ways to produce natural flavours and aromas under optimal conditions. Currently, industrial processes are mainly based on conventional chemical technology and traditional plant sources. Process improvements to fulfill the abovementioned criteria by modern biotechnological techniques are still missing in Europe.

The partners will investigate the production processes and principles in detail in the first phase maintaining direct contact with the other groups. Common quality and analysis criteria will be defined. The whole process, from the natural resources (educts) up to the product that is ready for application in food, feed, cosmetic processing technology, and in pest and insect control, is the subject of the investigations. Thus they will include resource extraction/production, conversion, and downstream processing.

In the second phase, the best single sub-steps will be combined to improve the overall volatile flavour, non-volatile flavour and fragrance production process. Here, the direct knowledge transfer is important and will be achieved by direct exchange of scientists. Other industries from EEC countries will be involved in this second phase to test the products and production process strategies. Thus a direct and fast knowledge transfer will be achieved on a precompetitive stage.
