Objectif To develop M&T for the meat industry, to demonstrate application and benefitsto disseminate benefits to the industryField work and model development clearly demonstrated the value and benefits of M&T. Energy savings of between 6% and 10% were achieved in five plants. Hopes of realising the potential savings were reduced with the discovery that computer equipment and engineering skills were too poor to enable the industry to fully exploit the technique itself. Far more and closer continuous technical support than had been estimated was, in reality, needed.Project activity is in three phases. The first is to research and set up the study. Secondly the field work, and finally reporting and dissemination. A statistical energy saving and management procedure for monitoring and target setting (M&T) that had been developed for other high energy using industries was re-shaped to fit meat companies. Using SuperCalc, M&T software was developed and written. A matrix of six representative plants that processed the three species (cattle, sheep and pigs) in small' medium and large factories, was identified. Operational links were established with each one. Outline site audits, detailed energy analysis (such as measuring boiler flue gases) and computer systems developed at all locations. Extra energy (oil, electricity) metering was installed where needed. Staff were trained in energy conservation, measuring, data recording and computer systems. Historical consumption data was then recovered and the staff at all sites were badgered to read meters regularly and consistently. Manuals based on the practical experience were prepared and dissemination carried out at key executive meetings. These were reinforced at operational levels through regionalbriefings for senior managers, arranged through the industry trade association, the Federation of Fresh Meat Wholesalers.
