Objetivo In order to comply with European regulations, agri-food companies must implement the principles of the HACCP method (Hazard Analysis Control Critical Point), which is considered an effective way of controlling and eliminating the risks associated with not achieving total hygiene in food products. This multiplier project is based on a project financed for three years (1993-95) under the EUROFORM programme. The latter project designed 12 training modules and trained 432 employees working in the animal-products preservation sector. To extend the scope of the existing tool aimed at animal product preservation and processing, the partners will:- add on to the project to cover three other sectors, i.e. milk/dairy products, fruit/vegetables and meat. This will be achieved by sharing technical and scientific data. The project will provide these sectors with suitable case-studies and risk-analysis for products and manufacturing processes;- adapt the system to meet the needs of small companies.
