Hazard analysis and control of food contamination : prevention of fusarium mycotoxins entering the human and animal food chain

Objetivo

In Europe wheat, barley and maize are significant components in food and feed processing. Fusarium moulds have become a serious problem because they produce a range of toxic metabolites (mycotoxins) which endanger the health of both humans and animals. This project will integrate Hazard Analysis with a range of control strategies for the prevention of these fungi and their mycotoxins entering the human and animal food chain. By identification of the critical control points in the food chain using HACCP and intergration of this with preharvest biocompetitive methods, post-harvest control using natural and novel food-grade preservation systems, and decontamination strategies using microbial and physical methods, entry into the food chain will be prevented. The commercial exploitation of the technologies will be examined in collaboration with end users. This trans-european consortium includes partners in UK, Finland, Holland, Spain and Italy.
