Objetivo This project will co-ordinate research to meet the needs of the bakery industry and improve processing efficiency. The network will also maintain a training programme on a range of specific topics that are forcing reform and modernisation in the foods industry. In order to disseminate and exploit the network activities and results, a web page will be set up with public access. The European bakery industry is not operating as efficiently or cost effectively as possible due to poor dissemination of novel technologies and processes across the industry sectors. This network will establish better communication and co-operation between all sectors within the bakery industry to lead to a definition of the requirements of modern baking technology for applications, protocol and management philosophy. Steps will be taken to address specific needs in the industry brought about by environmental and safety legislation.
