Developing biochemical and molecular markers for determining quality assurance in the primary processing of cocoa in west africa

Objective

The main purpose of the project is to improve the current quality assessment practices used both by producers and buyers of cocoa in West Africa, which are currently based on subjective parameters. The project will carry out detailed microbiological and biochemical analysis of the fermentation process as well as handling methods, from the field to drying and storage, in order to identify biological or chemical markers and to relate these to the quality of the final product. The aim is to develop a set of objective quality indices which provide a more objective indication of cocoa quality and which can be used in the laboratory and in the field.
