Biopolymer-based microstructures for improved food quality

The Product Microstructure Unit at Unilever Colworth has an international reputation for research in the area of structural and functional properties of biopolymer systems to deliver better quality emulsion, foam and frozen food products that are desired by and beneficial to the consumer. Projects are available in the areas of microstructure characterization and control in mixed biopolymer systems and food microstructure design for in-body function. Working as integral members of multidisciplinary project teams, the Fellows will obtain industrial research training, and will develop expertise in the physical chemistry of polymer solutions including kinetics of gelation, thermodynamics and kinetics of polymer incompatibility, the materials science of soft solids, and the behavior of small molecules within complex microstructures. They will learn how this information can be applied to food products, and how manufacturing process conditions affect the final microstructures of food materials as well as their breakdown and oral response. Fellows will be trained in industrial research project management. They will receive training in the use of a range of state- of-the-art instrumentation and techniques (e.g. rheology, scattering, microscopy, calorimetry) as well as pilot plant equipment. Unit scientists collaborate with many external academic groups, both in the UK and internationally, and Fellows will also have the opportunity to access expertise in this network.
