Cel Authenticity testing has become mandatory for different reasons, some of them are related to fraudulent substitutions of species in commercial products. This congress will cover the state of Food Authenticity regarding the main protein sources for human beings: meat and fish. The views of administrations (European Union, Food and Drug Administration, etc.), the views of producers or processors, and the views of consumers will have the chance to be voiced during the presentations and discussions. Also the state of the art of biochemical techniques employed for authentication of these products will be discussed, this include the latest DNA techniques. Finally, several lectures about the issue of labelling of transgenic organisms present in foodstuffs will take place.
