Optimisation of Tartaric acid and enonotanines extraction from winery wastes and their utilization for the synthesis of new compounds with biological activity and antioxidant properties

The proposed project deals with two main products from winery wastes recovery: Grape Seed Tannins (GST) and Tartaric Acid (TA). Both are highly valuable products of significant importance in the industry already. For recovery of GST, the main by-product of wine processing is pomace. Currently, this waste material is left unutilised in Moldova. Moreover 450 t of TA could be produced each year. Marketing TA at the minimum price of 10 Euro/kg would bring an income of around 4 mill. Euro. Objectives of GST-recovery: 1. Determination of tannin content in grape seeds of different varieties and place of cultivation in Moldova 2. Optimization of GST extraction procedures 3. Chemical modification of tannins by physical and chemical procedures and determination of functional groups in modified tannins 4. In vitro investigation of antioxidative and bioregulative activity of the modified GST. Investigation of the modified GST ability as exoinductors of some crops resistance to unfavourable thermal factors 5. Fractionation of modified GST Expected results for GST-recovery: > accumulation of grape seed tannin in different varieties of grape cultivated in Moldova will be determined > improved procedures (extraction systems) for GST isolation will be established through investigations of different solvent systems and concentration ranges including systems modelling > new methods for GST fractionation will be established for better overall quality of the tannins > synthesis routes for chemical modification of GST will be established to enhance functionality of the tannins > modified GST will be studied and the functional groups will be determined > structure of most promising tannins will be determined via LC-MS analyses > antioxidative and bioregulating properties of the GST fractions and modified tannins will be determined and utilisations proposed Objectives of TA-recovery: A. study and optimization of tartaric acid (TA) extraction using secondary and tertiary amines B. study of the mechanism of solid anionite (Amberlite type) impregnation with amines and of TA extraction C. study of TA crystallization D. synthesis and study of properties of compounds synthesized on TA basis E. study of antioxidant properties of the modified enotanins Expected results for TA recovery: > optimal physical-chemical parameters for TA extraction for both, model and real systems will be established, > conditions of TA re-extraction and amine regeneration will be determined, > a mechanism of impregnation of solid anionites with amines will be established > physical-chemical parameters and structure parameters of modified anionites will be determined > optimal conditions for TA extraction on modified anionites will be determined > optimal conditions for TA crystallization will be found and quality parameters determined > Development of new pathways for the syntheses of new organic compounds (tartar-imides and 1,3-dioxolan-4,5-dicarboxilic acids) with inhibiting properties
