Abstract

Choux pastry is essential since it can be used for a wide range of popular traditional bakery products; however its production system is not automated, requires a high level of expertise and is time-consuming with a complex two stage preparation process.

Therefore, the PROECLAIR project, which was funded under the European Commission's (EC) Seventh Framework Programme (FP7), aimed to develop an innovative technology to render this process automated.

This final activity report firstly outlines the project concept and objectives and then presents its numerous achievements. It also refers to the project's main scientific and technical foregrounds as well as to the obtained results. Finally, it closes with a brief overview of the implemented technology transfer activities.
