This report describes the development of microbiological reference materials for quality control in food and water microbiology. Reference materials were developed for use with qualitative tests (mainly in food microbiology) and for use with quantitative tests (mainly in water microbiology). The report begins with a general description of the microbiological methods used for the analyses of water and food, and basic principles of quality control for these measurements. The following chapters describe the method of preparing the microbiological reference materials, which was based on spray-drying of artificially contaminated milk. The progress towards stable and homogeneous materials is summarised, as well as the statistical tests developed for analysing these characteristics. Results from collaborative studies with the materials are given in the last chapter.
