This volume addresses the subject of the physical properties of foods and is a sequel to an earlier study (Physical Properties of Foods, Final Seminar of COST 90) published in 1983. This publication is a detailed account of the results of four years of European collaboration and deals with different subjects from those covered in the previous study. Initially the publication presents an overview of project COST 90bis with the remaining chapters divided into six parts: (i) diffusion of foods; (ii) electrical properties of foods; (iii) optical properties of foods; (iv) solid properties of foods; (v) data collection, handling and dissemination of food and non-food stuffs; (vi) conclusions of the COST 90 project.
