This bibliography is one of several produced as a result of collaboration under COST 90bis, the second European project on the physical properties of foods. The objectives of COST 90bis are the generation and assimilation of more information on the physical properties of food materials, in particular, more precise and accurate quantitative data. This publication relates to the colour measurements of foodstuffs which were studied as part of the second COST 90bis project. Over 1000 references are included on the subject, selected on the basis of their relevance to the projects. In the main part of the bibliography the references are in English, translated from the original where necessary, and arranged in alphabetical order of authors' names. In the second section the references are classified according to type of foodstuff.
