This bibliography is one of several produced as a result of collaboration under COST 90bis, the second European project on the physical properties of foods. The objectives of COST 90bis are the generation and assimilation of more information on the physical properties of food materials, in particular, more precise and accurate quantitative data. This report relates to the subject of electrical or dielectric data. Bibliography papers from the second COST 90bis programme are reviewed, with those containing quantitative data included. The first section arranges references alphabetically by author name followed by a classification under various subject headings. Final sections group references under four measurement frequency ranges while also detailing electric and dielectric data on specific food materials.
