The T-project LAB is concerned with Lactic Acid Bacteria. The designation T-project implies that it is a transnational ELWW project within the framework of the BRIDGE programme. Lactic acid bacteria are part of normal body flora and also play roles in the production of fermented foods and beverages, in the dairy, meat, bread, vegetable, wine and animal feed industries. These industries are therefore closely associated with this project through the Lactic Acid Bacteria Industry Platform (LABIP). The report presents abstracts of communications presented at this meeting, including review lectures outlining the state of the art and its incidence on the progress of the LAB project, and also posters describing the specific projects of each laboratory, including preliminary results.
