This publication reports on a meeting held in Brussels in January 1989 to discuss the project within the BRIDGE programme on the biotechnology of lactic acid bacteria. The status of European research in this field is described and high priority research identified. The need for CEC support in this area and the value of the project for industrial development in Europe are discussed. An overview of the organisation of the project is given, together with the conclusions and recommendations of the meeting. Finally, a list of the participants is also provided.
