The objectives of this study are to summarise the state of the art of research activities concerning food irradiation, with special consideration given to studies since 1985. The technical aspects of the effects of irradiation on food, the use of irradiation in combination with other treatments, and the irradiation of packaging material are reported. Details of legislation, control and statements of international commissions are provided. A number of remaining knowledge gaps and research priorities in the areas of the irradiation process and facilities, nutritional aspects, toxicology and packaging and detection methods are listed.
