This volume consists of presentations and summaries of presentations given at the second plenary meeting of the SENS (relating sensory, instrumental and consumer choice studies) research project, held at the Institute of Food Research, Reading (GB) in June 1991. The presentations concern research into food quality, sensory quality and consumer-related issues. The main aim of the project as a whole has been to stimulate increased collaboration within the European food industry.
