This volume contains the proceedings of a meeting held in Southampton (GB), in December 1992. The papers presented concern research being carried out under FLAIR concerted action no. 6, the prevention and control of potentially pathogenic microorganisms in poultry and poultry meat processing, and FLAIR no. 9, the improvement of food safety and quality through the use of interactive and competitive bindings of food lectins and bacterial adhesions in the gut. Both projects aim at minimising the colonisation of potentially pathogenic microorganisms. FLAIR no. 6 focuses on infection, flock management, and bird and organism related factors. FLAIR no. 9 concentrates on finding natural additives such as specific plant lectins and/or polysaccharides, which as natural dietary supplements influence colonisation of the gastrointestinal track with potentially pathogenic microorganisms.
