Abstract

This publication presents the proceedings of two workshops held within the framework of FLAIR concerted action no. 8, in vitro toxicological studies and real-time analysis of residues in food. The workshops were held in 1992, one in Belgium on new methods for safety assessment of residues in food, and the other in Greece concerning safety evaluation of beta-agonists and bound residues in food. The papers presented provide an up-to-date picture of residue problems. The replacement of protocol animal testing procedures by in vitro methods has been reviewed critically, and data presented have demonstrated the power of these techniques. Furthermore, research on real-time methods for food contaminants has shown that inspection procedures can be improved so as to satisfy consumer demand for food safety and quality.
