This publication summarises the oral presentations and discussions from a workshop organised by COST 92 on dietary fibres. The principal aims of the meeting were the exchange and discussion of new scientific results and the evaluation of objectives for future research activities. The workshop was divided into three topics, dietary fibre processing, processing and properties of dietary fibres and bioavailability of micronutrients in raw materials and processed foods.
