The behaviour of trace metals in the food chain and their toxicological effects require that the setting of criteria for an adequate dietary intake of essential and toxic metals must take into account factors influencing trace metal toxicity in the organism. Those discussed in this work include the bioavailability, the chemical form, and composition of the diet, the metabolic interactions with other elements and the biotransformations in the body. Priorities for future research in this area are indicated.
