The microbiology of food and of cosmetics in Europe immediately pre-1993
This volume is a collection of twelve papers presented at the Second International Congress of Food and Cosmetic Microbiology, held at Ispra in July 1992. Three of these cover legal topics (present state of food law and the problem of monitoring, the proposed directive on hygiene of foodstuffs and a proposed strategy to ensure the quality and safety of food and cosmetic products). Other papers related to specific research in areas such as organisms and toxins (listeria in food, M(1) aflatoxins in cheese products and their purification by use of monoclonal antibodies) and to research methods (genetic probes); two papers concerned the microbiological monitoring of cosmetic products (quality assurance, monitoring before and after use); two papers were on preservation (correlation between chemical analysis and microbiological behaviour of a preservative system, methods of evaluating preservatives and their effectiveness) and two papers on contamination (of Sicilian honey and of karite and peanut butters from Burkina Faso).
