This publication focuses on food projects funded in the AIR programme. Food research is carried out under two headings: food processing and end use/products. A total of 72 projects have been selected and funded, involving 606 participants, and 15 % of the total AIR budget. These projects are described in this book and details given of objectives and contact details. The projects are broken into nine clusters: food technologies, food safety, dairy technologies, nutrition, fruit and vegetable technologies, meat technologies, socio-economic and consumer aspects, food packaging, and inputs for food crops.
