In order to bridge the gap between the research activities on lactic acid bacteria carried out under the Third and Fourth Framework Programmes, the Biotechnology programme has incorporated specific activities. The focus of the research is on: chromosomal analysis, proteolysis, bacteriophage, natural antimicrobials, food grade systems, biosafety studies, novel approaches to targeted screening and secretion of heterologous proteins of commercial interest. The book of abstracts contains the communications presented at the meeting involving the BRIDGE T-project and the BIOTECH G-project.
