Abstract

The aim of the workshop was to discuss the recent progress in the analysis of carbohydrate and non-carbohydrate components considered or currently under discussion to be included in the dietary fibre concept. The workshop was divided in 4 topics covering:
the chemical and nutritional classification of food carbohydrates;
the analytical methods for the determination of non-digestible carbohydrates not usually included in the dietary fibre concept;
analytical methods for the determination of non-carbohydrate substances associated with dietary fibre;
analytical methods for the determination of components conventional considered as dietary fibre. These proceedings contain the presentations and summaries of the discussions.
