  • The certification of two reference materials to be used for the detection of cow's milk casein in cheeses from ewe's milk, goats' milk and mixtures of ewes' and goats' milk (CRM 599)

Abstract

This report describes the preparation and characterization of two freeze-dried curd reference materials to be used to detect adulteration by cow's milk casein in cheeses from ewes' milk, goats' milk and mixtures of ewes' and goats' milk. The materials consist of a mixture of ewes' and goats' curd and contain 0% and 1% respectively of cows' milk. The homogeneity and stability studies and the analytical work performed for the certification of the two materials for the European Commission regulation are described. The report contains all the results and describes the reference method according to the regulation.
