Vegetable fats in chocolate
The proceedings of the first project meeting on vegetable fats in chocolate contain the abstracts of presentations of the project partners. The project was started in 1997 in order to develop and validate a suitable method for the quantification of 5% of foreign fats (cocoa butter equivalents) in chocolate. This first project meeting was held to exchange experiences and to elaborate a detailed working plan, however some of the results will be of interest to third parties. For this reason not only the abstracts of the lectures but also the results of the round table discussion are published.
