Guidelines for experimental design and data analysis in studies on cheese: Improvement of the quality of the production of raw milk cheeses

Two European research projects namely COST 95: Improvement of the quality of the production of raw milk cheeses; and AIR-3 CT94-2039: The influence of native flora on the characteristics of cheese with Appellation d'Origine Protégée (AOP) made from raw milk were combined and given the acronym FLORA. The combined concerted actions provided a framework for writing a set of guidelines for the design and analysis of experiments on cheese. The aims of these guidelines are to inform readers of the basic statistical concepts of experimental design and the steps involved in planning and analysing experiments with cheese. Additionally the guidelines will help to promote dialogue between statisticians and food scientists and technologists.
