Biogenically active amines in food
Amines have a role in the regulation of body temperature and stomach volume and pH, but at high levels are harmful to the body. Amine levels in food therefore, need to be kept low. Further research is required to assess the full effects of biogenically active amines in food, so that plant geneticists can investigate methods of keeping dietary amine content at safe levels.
