Every member state that has contributed to this book carries out a research programme in food safety and nutrition. Many of these are complementary and reflect different national priorities brought about by differing environments and social traditions. However there is also much that is similar, for example, many member states have programmes studying the major food poisoning organisms, many are seeking to develop biosensors for rapid testing to name but two such areas. The need to make the best possible use of resources across Europe and secure synergy via networking is now increasingly recognized. These are important factors that have led to the emergence of a strong research programme financed by the EC.
