Sessions comprise: presentation of predictive microbiology; modelling of microbial growth as a function of temperature; modelling growth and survival according to other factors; pathogens and related risks; predicting changes in safety and quality of food products during chilled preservation; fish products; meat products (including poultry); dairy products; fruit and vegetables; prediction of microbial behaviour; time-temperature integrators (TTI); validity of models and reliability of predictions.
