Degradation of Flavanoid Glycosides and glycones during in vitro fermentation with human faecal flora
Using in vitro fermentation systems human faecal flora metabolism of quercetin-3-rhamnoglocide, hesperatin-7-rhamnoglocide, naringenin-7-rhamnoglocide and their respective aglycones quercetin, hesperatin, and naringenin were investigated by liquid chromatography coupled with mass spectrometry and tandem mass spectrometry.
