This publication includes the presentations made at the workshop on "Bioactive inositol phosphates and phytosterols in foods" organized by COST Action 916 "Bioactive plant cell wall components in food", at the meeting held on 23-25 October 1997 in G÷teborg, Sweden. Little is known about the various physiological effects of the very large number of bioactive plant cell wall components which are present in unrefined food. The main aims of the workshop were:

- To understand the significance of these compounds present in the diet
- To discuss analytical methods used for their determination in foodstuff and to evaluate process-induced changes
- To evaluate data on the physiological effects of these bioactive compounds
- To select plant varieties and plant oils with beneficial properties. ies.
