The present volume contains the contributions to the first general workshop of COST Action 917, "Biologically active amines in food". The meeting was held in Torremolinos (Spain) from 5 to 8 November 1998 and was attended by around 100 participants from 18 countries. The scientific sessions of this workshop covered the following issues: biogenically active amines in food/food intolerance, uptake/transport and dietary polyamines, physiology of polyamines, and polyamines and tumour growth.
