This workshop was initiated by the Food Products Unit of the JRC Institute for Health and Consumer Protection upon the request of prominent food chemists in order to evaluate the state-of-the-art research carried out today on food allergy, especially regarding chemical and technological aspects. The report contains the minutes, the agenda of the workshop and the speakers' abstracts. The results of the workshop demonstrate that there is a strong need for further research and especially for collaboration among scientists in various fields. The outcome of the workshop should be reflected in the next International Allergenicity Conference in Budapest in 2003.
