More detailed and more technical background information is given relating to this topic of the fifth call for proposals under the specific programme for standards, measurements and testing (SMT), 1994-1998. In a precedent study supported by EEC (Contract n 5472/1/5/412/91/05/BCR-D10) the following new analytical methods were developed for the assessment of fruit juice authenticity:

- Organic acids by HPLC;
- Anthocyans by HPLC;
- Carotenoïds by HPLC;
- Polymethoxy flavanones in citrus juices by HPLC;
- Oligosaccharides by HPLC.

CEN/TC 174 proposed also to add to this list another component, very important for industry, nitrate. Moreover, the benefit of HPLC (High Performance Liquid Chromatography) allows to obtain quicker and more specified results. The objectives of the proposal is to validate the 6 methods of analysis, to test it by many laboratories and to get precision data (expressed in terms of repeatibility and reproducibility according to ISO 5725). A time scale and expected result format are also described.
