Emulsification-free oil degumming process

Abstract
Contrary to conventional belief, there is no need to employ emulsification in oil degumming processes. According to our new discovery, the conversion of nonhydratable phospholipids (NHP) to hydratable phospholipid (HP) can be enzymatically carried out in the oil phase. The resulting HPs can be easily removed through water degumming. No emulsification is involved throughout the process.
The process uses immobilized phospholipase as the catalyst in a mild reaction. Gentle stirring or a packed bed is used. Depending on the oil source, different types of phospholipases can be applied. For water degumming, an aqueous solution with or without a chelating agent or an acid can be employed to satisfy end requirements. Gum and degummed oil can be easily separated. The phosphorus level in the degummed oil can typically be reduced to less than 5 ppm.
