Objective
Over the past 20 years, industrial bread-production has been made possible by decisive technical advances. As a result, occupations in the baking/pastry-making trade are now being redefined in fundamental terms. Task-sharing has caused the traditional baker's job to split into two new and very different profiles. The objective of this project is to analyse the work of the people who bake and distribute bread and propose a suitable training scheme for this occupation.
The project will therefore entail improving employment prospects through the acquisition of new skills made necessary by changes in work organisation. To bring the project to fruition, three types of complementary partners (industrial groups, trade unions and training organisations) will contribute trade know-how, as well as legal, forecasting and economic expertise, and knowledge of analysis methods respectively. Following completion of the analysis work, the results will be disseminated in the form of a document comprising a job profile guide, an evaluation guide and a programme of training modules. A video will explain the different skills required in this job profile.
