THE (BIO)CHEMISTRY AND ARCHESTRUCTURE OF FRUIT AND VEGETABLE TISSUE AS QUALITY PREDICTORS FOR OPTIMIZING STORAGE AND PROCESSING REGIMES : BASIC RESEARCH LEADING TO APPLICABLE MODELS AND RULES

Objective



The objective of the project is to develop predictive mathematical models leading to improved storage and processing strategies for fruits and vegetables. The study will combine work on biochemical and physical properties of cell walls, structure of plant tissue, effects of storage and processing conditions and the relationship between these factors and sensory attributes of the product with spectroscopical screening methods. An important element of the proposal is the mathematical modelling of these interactive parameters and the use of the model in the optimisation of storage and processing strategies.
