PRODUCTION OF HIGH QUALITY CHEESE FROM EXTENSIVE SYSTEMS OF SHEEP AND GOAT PRODUCTION IN LESS FAVOURED AREAS

Objective

The purpose of this proposal is to develop extensive farming systems producing high quality cheese from goats and ewes in less favoured areas of Southern Europe. The study will consist of a survey of existing farming systems and structure of the industry followed by field experimentation. The latter will consist of studies on the production and quality aspects of both milk types and the factors influencing a seasonal uniform supply. It is also proposed to build a general computer model of extensive grazing systems so that the potential range of Southern European vegetation could be assessed for their capacity to support extensive sheep and goat milk production systems.
