ENERGY SAVING IN THE WINE-MAKING INDUSTRY USING NEW REVERSE OSMOSIS MUST CONCENTRATION TECHNOLOGY

Objectif

Installation of a two-stages wine must concentration unit to correct "low-sugar" musts. A clarification stage composed of a centrifugal separator and a kieselguhr filtre separates the small suspended particules from the must. A reverse osmosis stage equipped with synthetic polymers membranes allows the concentration of the must with an increase of the sugar content reaching 4 brix. The plant will treat 100 m3/day and removes from 5 to 20% of water from the must. The concentration of 1t of sugar needs 100 kWh of electricity for the reverse osmosis instead of 436 kWh and 2020 kCal of thermal energy. The innovation lies in the application of Reverse Osmosis in this sector.
