Objetivo To demonstrate a new concentration process based on reverse osmosis for energy saving in the production of tomato concentrate. A 1278 toe/y energy saving is forecast while the payback time is estimated at 5 years.A conventional thermal evaporative process is to be replaced by a combined mechanical dewatering. Tomato juice concentration involves two steps, clarification pretreatment using a decanter centrifuge and disk type ultracentrifuge followed by mechanical concentration by means of reverse osmosis. The solid fraction removed during the clarification step is added afterwards to the reverse osmosis concentrate. The reverse osmosis plant involves synthetic polymeric membranes and removes 9 m3/hour of water to produce 9 tonnes/hour of concentrate during the 3 months of tomato harvesting. The low temperature methods preserves the taste and smell of the concentrate.
