THE DEVELOPMENT OF NEW TIME-TEMPERATURE-INTEGRATORS (PRODUCT HISTORY INDICATORS) FOR THE QUANTIFICATION OF THERMAL PROCESSES IN TERMS OF FOOD SAFETY AND QUALITY

Objectif



The development of Time Temperature Integrator (TTI) sensors to improve the safety and quality of heat preserved foods and reduce costs.

The aim is to develop TTI's which are to easy to prepare, use, recover and permit fast reading. Research will consist of 3 major tasks:

1. theoretical modelling of responses to TTI's under typical time - temperature history curves;
2. development of TTI's based on microbial, protein-based and chemical systems; and
3. the evaluation of the performance and reliability of selected TTI's in a number of pilot-plant simulators.
