Quantitative 13C NMR determination of the fatty acid composition of triglycerides from olive oil

Objectif



The aim of this proposal is to provide through an intercollaborative study a highly specific means of characterizing different olive oil types with a view to defining a standard protocol for use in the authentication of olive oil.

High resolution 13C Nuclear Magnetic Resonance (NMR) spectra of vegetable oils can provide valuable information about the positional distribution of fatty acids in a mixture of triglycerides. It is well known that the acyl distribution and, more specifically, the positional distribution of the acyl groups on the glycerol moiety, can vary considerably between oil varieties. For olive oil, the fatty acid distribution can also vary according to geographical production area, meteorological conditions in the year of production and even the cultivar and maturity of the olives collected.

The results if this research project will be disseminated through an informative workshop open to participants from all Member States.
