Innovative method to increase fruits' active principles in sherbets

Nowadays people are interested in living a healthy life, starting from food. Those who are on a diet or have healthy problems such as diabetes or some kind of allergies often exclude ice creams. Sherbets (sorbets and "granites"), on the contrary, are produced without milk and fats. Orange, lemon or other types of fruit juice, sugar, and water compose them . At the same time they have a few calories and many benefit compounds and vitamins that have an important role to prevent illness and to carry on a healthy life. Nevertheless, during the producing process, sorbets and "granites" loose many of those vitamins and compounds. The project intends to raise the presence of all the fruits' active principles in order to create product which has the advantage of preventing cells ageing, thank to antioxidants, such as flavorous and antocyanins, and to decrease the rising up of allergies and inflammations thanks to fruits' vitamins .
