Final Report - HEATOX (Heat-generated food toxicants, identification, characterisation and risk minimisation)

Heating food offers many advantages: it adds colour, flavour and aroma, and minimises harmful germs. However, various hazardous compounds may form during the process.

The EU-funded HEATOX project focused on health risks associated with these compounds, aiming to identify innovative heating and cooking methods to minimise their formation, and provide safe, nutritious and high-quality foodstuffs. A series of recommendations were also formulated based on these findings.

This final activity report includes an overview of the project objectives and analyses the undertaken activities. The implemented methodologies and the results obtained are presented in detail. Moreover, the document focuses on the final publishable results and on the implemented knowledge dissemination plan.
