This EU COST 96 publication booklet consists of presentations and summaries of presentations given at the meeting of all four working groups organized as part of the COST Action 96 on Interaction of food matrix with small ligands influencing flavour and texture. The short mission exchanges are also reported. The meeting was held at Instituto Agroquímica y Tecnología de Alimentos, Valencia, Spain, on 14-16 November 1996. Some information of the COST Action 96 meeting held at Leatherhead Food RA, United Kingdom, on 13-15 June 1996 is also included.
