Research teams in Europe currently involved in research projects on food quality modelling attended a workshop on Food Quality Modelling organized in Leuven, Belgium in 1997 in the framework of the COST action 915 on consumer oriented quality improvement of fruit and vegetable products and Copernicus project on shelf-life prediction. In this book the papers which were presented in both the oral and the poster session are collected. They cover a broad range of topics related to modelling methodology and applications. As such, this book provides a compilation of important new results in the rapidly growing field of food quality modelling.
