The main objective of COST Action 917 is to combine pertinent European expertise to improve our knowledge on the importance and contribution of biologically active amines in the diet to growth and health by establishing their bio-availability and clarifying their physiological functions.

This volume contains the papers presented at two workshops organised by two of the working groups of COST 917 during 2000:

- Second Workshop of Working Group 1 'Physiology and metabolism of biologically active amines', held at Spa, Belgium, from 13-16 April 2000.

- Third Workshop of Working Group 4 'Biologically active amines in food processing and amine produced by bacteria', held at Tuusala, Finland from 7-10 September 2000.
